Heat in a large, heavy skillet:
1 1/2 tablespoons olive oil
Add:
2 or 3 cloves garlic, minced
2 anchovies, rinsed, patted dry, and finely chopped (optional)
Cook over medium-low heat until the garlic is just beginning to color, 30 to 60 seconds. Add:
1 pound fresh spinach, stemmed, washed well, and shaken dry, or two 10-ounce packages frozen
Cover the pan and cook over high heat until steam appears. Reduce the heat and simmer, covered, until tender, 2 to 3 minutes. Season with:
Salt and ground black pepper to taste
Or pass a bowl of:
Nam Prik (Thai Hot) Sauce or Ginger Soy Sauce
